Pizza Topped With Love

Supposedly anyone who doesn’t like pizza is a weirdo.

I guess that makes me a weirdo.

You’ve got your Pizza Hut, your Dominos, your Papa Murphy’s and John’s…none of them appeal to me.

As a kid, teachers would try to entice our class with pizza parties.  I’d attend other 8-year-olds’ birthdays, where I’d be left behind by the stampede of kiddos flocking to assault the pizza boy.  I had friends who were shocked to discover they weren’t likely to be served pizza at my sleepovers.  I couldn’t have even told you where the nearest pizza place was.

And it’s still that way to this day (minus the class pizza parties, sleepovers, and 8-year-olds’ birthdays, of course).

However, the people I’m related to actually like pizza.  It’s a wonder we share the same gene pool.  And these people requested I follow up my Rolled Fondant Bows with something whose main ingredient isn’t sugar.  Oh, the nerve!

But you know that thing call “unconditional love?”  I have that for them.  So no matter how much some of their quirks annoy me, or their tastes perplex me, that unbreakable bond remains. 

At least those oddballs I call my family gave this pizza their stamp of approval!  The crust was a little too wheat-y, which is why it’s still being perfected (**recipe to come!**).

Do I even need to ask if this looks good to you pizza-lovers?

Pizza toppings include: Grilled chicken slices, red bell peppers, green bell peppers, orange bell peppers, a few white onion rings, 3/4 cup (3 ounces) fat free mozzarella cheese, and this delicious sauce…

Easy Peasy Pizza Sauce

Makes enough sauce for one 12″ pizza

  • 1 Tablespoon olive oil
  • 1 teaspoon minced garlic (about 2 cloves’ worth)
  • 1 8-ounce can no-salt-added tomato sauce
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • ground pepper and/or salt, to taste
  1. In a medium saucepan, heat olive oil over low heat.  Add garlic and saute until it begins to turn slightly brown.
  2. Add tomato sauce.  Add basil and oregano.  Stir and increase to medium heat until the sauce reaches a simmer.
  3. Reduce heat to low and let it simmer, covered, for 10 minutes.
  4. Once finished, allow it some time to cool and thicken before spreading onto pizza crust.

Oh my gosh, that looks amazing! My absolute favorite pizza is this one with blackened shrimp on it- you should try it!
